Easy Lentil Sloppy Joes

Ingredients
  

  • 3 cups brown lentils, cooked
  • 1 tbsp olive oil
  • 1/2 cup onion, chopped
  • 1/2 cup ketchup
  • 2 tbsp dijon mustard
  • 2 tbsp brown sugar
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • 4 Burger Buns

Optional

  • 1 cup shredded cheddar cheese
  • 3 tbsp chopped green onions
  • cup cole slaw

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat. Add chopped onion and sauté 2-3 minutes or until onion is translucent.
  • Add the cooked lentils and the remainder of the ingredients to the skillet. 
  • Simmer over medium heat about 5 minutes.
  • Season to taste with salt and pepper. 
  • Serve on a bun with optional toppings.
  • Enjoy!
