In a large bowl, combine flours, baking powder, and salt.
In a small bowl, using a hand mixer (or whisk), combine brown sugar, molasses, beet juice and eggs.
Add wet ingredients to dry ingredients, stir until combined. Add walnuts and combine.
Add in batches to waffle iron and cook approx 4-5 minutes depending on the waffle maker.
Serve with sliced fruit, maple syrup, and chopped walnuts if desired

For this recipe I use Beet Performer juice. However, any beet juice will do the trick! If you have a juicer, juice your own, it's delicious and so nutritious!
