Beet Waffles

Equipment

Ingredients
  

  • 2 cups spelt flour
  • 1/4 cup almond flour
  • 3/4 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp brown sugar
  • 2.5 tbsp molasses
  • 1 cup beet juice, plus 2 tablespoons *see notes
  • 2 eggs
  • 1/4 cup walnuts chopped

Instructions
 

  • Heat waffle maker.
  • In a large bowl, combine flours, baking powder, and salt.
  • In a small bowl, using a hand mixer (or whisk), combine brown sugar, molasses, beet juice and eggs.
  • Add wet ingredients to dry ingredients, stir until combined. Add walnuts and combine.
  • Add in batches to waffle iron and cook approx 4-5 minutes depending on the waffle maker.
  • Serve with sliced fruit, maple syrup, and chopped walnuts if desired

Notes

For this recipe I use Beet Performer juice. However, any beet juice will do the trick! If you have a juicer, juice your own, it's delicious and so nutritious!
