Ingredients

cup
lentils
uncooked, rinsed
1/4
cup
rice wine vinegar
or flavored vinegar**
1/4
cup
olive oil
1.5
tbsp
dijon mustard
1
celery stalk
chopped

tomato
seeded and chopped
Instructions
Cook lentils in 5 cups water for 20 minutes or lentils are tender. Drain and let cool.
In a small bowl, combine vinegar, oil, and mustard.
In a large bowl, combine cooked lentils, celery and tomato.
Add vinegar mixture to lentils, stir to combine. Salt and Pepper to taste and serve
Notes
**I like to mix this up and use a flavored vinegar such as pineapple, adds a soft sweet flavor.
