Spinach in Garlic Ginger Sauce over Rice

Ingredients
  

  • 1/2 cup vegetable broth
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch
  • 1 tbsp brown sugar
  • 1/4 cup pineapple juice
  • 1 tsp sesame oil
  • 1 tbsp olive oil
  • 1.5 tbsp garlic
  • 1 tbsp ginger
  • 4 cups spinach, fresh
  • 2 cups rice, cooked

Instructions
 

  • In a small bowl combine broth, pineapple juice, soy sauce, rice vinegar, brown sugar, sesame oil, and cornstarch.
  • Heat oil in deep pain over medium heat. Sauté garlic and ginger for 1 minute.
  • Add spinach and cook until slightly wilted approx. 1 minute.
  • Add sauce, stirring continuously until sauce thickens about 1 minute.
  • Serve over cooked rice.
  • Top with tofu or additional veggies.
  • Enjoy!
