Fresh Pineapple Salsa

This Fresh Pineapple Salsa recipe was born out of necessity for my daughter’s college graduation party. We were hosting a backyard taco bar, and someone requested pineapple salsa. I had never made it before, but I figured fresh pineapple, lime, cilantro, and jalapeño couldn’t go wrong.

I knew this recipe was a winner when one of the college boys yelled across the yard, “Hey guys, the pineapple salsa is the way to go!” The bowl was empty within minutes. Since then, this has become one of my most requested recipes, and I’m happy to finally share it here.

Fresh pineapple is the star of this salsa. It adds the perfect balance of sweetness with crisp texture, while the jalapeño, lime, cilantro, and red onion bring just enough savory flavor to keep every bite bright and refreshing. This recipe makes about 6 servings.

It’s incredibly versatile. Spoon it over tacos, serve it alongside your favorite Mexican-inspired meals, or simply enjoy it with tortilla chips.

Ingredients

  • Fresh pineapple: 2 cups, diced small. I recommend fresh pineapple for this salsa. Canned pineapple tends to be sweeter and softer in texture which will change the taste and texture of this fresh salsa.
  • Jalapeño: 1 tablespoon finely chopped (about ½ jalapeño). You can substitute pickled jalapeño pepper if your in a pinch. The pepper will not be as crisp but since it is not the main ingredient it can work if needed.
  • Red onion: ¼ cup finely chopped
  • Lime: zest and juice of 1 lime.
  • Cilantro: ¼ cup chopped fresh cilantro.
  • Sea Salt: ⅛ – ¼ teaspoon. I would recommend starting out with the ⅛ teaspoon and adjust from there according to your taste preference.

How to Make Pineapple Salsa

Yields about 2 ½ cups of fresh salsa.

Add all of the ingredients to a medium bowl and gently stir to combine.

You can serve it immediately, but I think it’s even better after chilling for about an hour, allowing the flavors to blend together.

Tip: If you aren’t a fan of raw red onion, simply leave it out or substitute a little chopped green onion for a milder flavor.

Storage

Store leftover salsa in an airtight container in the refrigerator for up to 3 days. The pineapple will continue to release a little juice as it sits, so simply give it a quick stir before serving.

  • 2 cups fresh pineapple, chopped into small chunks
  • 1 tablespoon Jalapeño pepper, seeds removed and chopped fine
  • ¼ cup red onion, chopped fine
  • ¼ cup cilantro chopped
