Nothing says summer better than watermelon! While I love to eat watermelon right off the rind, it’s also nice to have a refreshing salad that combines both those sweet, salty, and tangy flavors. This Watermelon Feta and Cucumber Salad does just that! It’s refreshing, hydrating and easy to throw together. The sweet and tart dressing helps pull all the flavors together.

I have an abundance of mint in my garden during the summers, which is why I love this salad as we get to enjoy this beneficial and delicious herb in an easy way.

Ingredients

Salad

  • Watermelon: seedless or remove seeds.
  • Feta cheese: crumbled (may substitute with crumbled goat cheese)
  • Cucumber: peeled and seeds removed. Or strips of peel removed.
  • Mint: fresh mint chopped (may substitute with fresh basil or lemon balm for a different flavor profile)

Dressing

  • Olive oil
  • Honey
  • Lime juice and zest
  • Salt

Instructions

Prepare the watermelon by cutting it into cubes. Then chop the cucumber, you can remove or leave the seeds depending on preference as well as the skin. I like to remove portions of skin to give that nice presentation. Crumble the feta if not already crumbled.

Make the dressing: whisk together all of the dressing ingredients.

Mix it all together: in a large mixing bowl, combine watermelon, cucumber, feta and mint. Pour dressing over salad and toss to combine.

Watermelon Feta and Cucumber Salad

Ingredients
  

Salad

  • 8 cups watermelon (about ½ of a melon) – seedless chopped
  • 2 cups cucumber, (large) chopped
  • ½ cup feta cheese, crumbled plus additional if desired
  • 2 tbsp fresh mint chopped

Dressing

  • 1 tbsp olive oil
  • 3 tbsp fresh lime juice
  • 3 tbsp honey
  • 1 tsp lime zest
  • pinch of salt

Salad Dressing

  • Whisk all ingredients in a small bowl.

Salad

  • Prepare watermelon by removing rind and chopping watermelon flesh into 1-inch cubes. Peel cucumber (or remove strips of peel), remove seeds and chop into cubes. Crumble feta.
  • In large bowl, add watermelon, cucumber, feta and mint. Pour dressing over the salad and toss to combine.
  • Serve and Enjoy!

Notes

For best results, allow flavors to blend for 30 minutes before serving.
