Watermelon Feta and Cucumber Salad

Ingredients
  

Salad

  • 8 cups watermelon (about ½ of a melon) - seedless chopped
  • 2 cups cucumber, (large) chopped
  • ½ cup feta cheese, crumbled plus additional if desired
  • 2 tbsp fresh mint chopped

Dressing

  • 1 tbsp olive oil
  • 3 tbsp fresh lime juice
  • 3 tbsp honey
  • 1 tsp lime zest
  • pinch of salt

Instructions
 

Salad Dressing

  • Whisk all ingredients in a small bowl.

Salad

  • Prepare watermelon by removing rind and chopping watermelon flesh into 1-inch cubes. Peel cucumber (or remove strips of peel), remove seeds and chop into cubes. Crumble feta.
  • In large bowl, add watermelon, cucumber, feta and mint. Pour dressing over the salad and toss to combine.
  • Serve and Enjoy!

Notes

For best results, allow flavors to blend for 30 minutes before serving.  
Storage
Best when consumed the day it is made or within 24 hours. Store in an airtight container in the refrigerator. Stir to incorporate dressing before serving. 
Substitutions
May substitute basil for mint
May substitute crumbled goat cheese for feta cheese
