Preheat oven to 350 ℉. Line a baking sheet pan with parchment paper.
In a large bowl, combine the oats, dried fruit, nuts and seeds.
In a small bowl, combine the melted coconut oil, maple syrup, and vanilla extract.
Add coconut oil mixture to oat mixture and stir until combined.
Spread granola on prepared sheet pan and bake 10 minutes.
Remove pan, stir granola, place back in oven and bake for another 10 minutes.
Cool and Enjoy!

StorageStore homemade granola in an air-tight container at room temperature for up to 30 days. For best results, use within 2 weeks. Homemade granola can also be stored in the freezer for 3-6 months for longer storage.
