No-Bake Energy Balls

These no-bake energy balls come together quickly in a food processor using simple, whole ingredients. Made with Medjool dates, nuts, hemp seeds, and cinnamon, they offer a naturally sweet, nutrient-dense snack that's perfect for meal prep, pre-workout fuel, or an easy grab-and-go bite.

Ingredients
  

  • ½ cup almonds
  • ½ cup walnuts
  • ½ cup pecans
  • 8 medjool dates pits removed
  • 2 tablespoons hemp seeds
  • ½ teaspoon vanilla extract
  • ½ - 1 teaspoon cinnamon
  • ¼ teaspoon sea salt

Instructions
 

  • In a food processor, blend almonds, walnuts and pecans until crumbly.
  • Add dates and blend 10 seconds.
  • Add rest of ingredients and blend about 20-30 seconds. The oils should begin to release from the nuts and you will have a consistency that will stick together. Adjust cinnamon (and/or vanilla extract) to your liking.
  • Form into bite-sized balls.
  • Makes about 12 balls.

Storage
Store in the refrigerator in an airtight container for up to one week. Or in the freezer for up to 3 months.
