Our family loves veggie sushi rolls! But it can get expensive buying it. Not only is it cheaper to make yourself but it is tastes so much better also!

I always keep sushi rice and nori sheets on hand at all times for those days when we are craving fresh sushi. It’s so easy to pull together. And if you are having guests over for dinner and make homemade sushi, they will undoubtedly think you are an amazing cook!! Which you ARE! Or, even better, you have them make your own sushi bar! This is a huge hit with our friends and family on a Saturday night.

For rolling the sushi, I use a Bamboo Sushi Rolling Mat. You can get fancy with all different types of sushi mats and makers, but honestly, my simple bamboo mats have lasted over 17 years now!

To begin – start by making the sushi rice. Ideally, it’s best to soak the rice for about 30-45 minutes prior to cooking. This helps remove any excess starch and reduces cooking time. However, if you are short on time, simply rinse the rice thoroughly 2-3 times until it runs almost clear, removing any excess starch. I’ve been short on time and had to do this many times and it comes out just as good. Link to sushi rice recipe here – Easy Sushi Rice

While rice is cooking, peel and slice a large sweet potato into fry-sized sticks. Combine soy sauce, brown sugar, sesame oil, and garlic powder in a small bowl. In a pan, place sweet potatoes and toss with marinade sauce. Bake in 400 degree Fahrenheit oven for 30 minutes. Tossing halfway through. Remove from oven and cool.

Make Spicy Mayo – in a small bowl combine mayonnaise and sriracha sauce.

How to roll – Spread the rice to the bottom and side edges, leaving about 1 inch of the top of the sheet.

Place filling at bottom of sheet, and begin rolling, making sure to tuck the sheet as you go making a tight roll. Slice into 1-2 inch slices. Top with fried onion rings and spicy mayo and enjoy!

Ingredients

Sweet Potato

  • 1 sweet potato large, sliced into thin sticks
  • 3 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tbsp brown sugar
  • 1/4 tsp garlic powder

Spicy Mayo

Sushi Rolls

  • 6 nori sheets
  • 1 carrot shredded
  • 1 avocado sliced
  • 1/2 cup fried onion rings

Instructions

Sweet Potato

  • Preheat oven to 400 degrees Fahrenheit.
  • While rice is cooking (see notes for recipe link) prepare sweet potato by peeling and slicing into fry-sized strips.
  • Combine soy sauce, brown sugar, sesame oil, and garlic powder in a small bowl.
  • In an oiled baking pan or baking sheet, place sweet potatoes and toss with soy sauce mixture.
  • Bake in prepared oven for 15 minutes, remove and toss. Place back in oven and bake an additional 15 minutes.
  • Remove from oven and cool.

Spicy Mayo

  • In a small bowl combine mayonnaise and sriracha sauce. (If you have a small squeeze bottle, spoon sauce into bottle-see notes) Add additional sriracha sauce for more spice!

Notes

For Spicy Mayo – if you have a small squeeze bottle, spoon spicy mayo into bottle. Makes for a beautiful and fun presentation! I personally use these squeeze bottle
Sushi is always more fun to eat with Chopsticks!
