Have bananas that are over ripe, but tired of banana bread? Then these Healthy Banana Cookies are for you! They are the perfect guilt-free, soft, chewy snack! No sugar, no eggs, no butter, no oil! And super simple and easy to throw together.

We love to Fatbike on the snowy trails with our boys (Zeus and Thor) – these treats are a must have when on a long ride. The bananas add flavor, texture and sweetness. And the wholesome ingredients make these so much better than any packaged protein or energy snack.

You can make so many variations with these cookies, simple add 2-3 tablespoons chocolate chips, dried fruit, nuts, coconut or combinations of these to make them unique each time.

Ingredients for Healthy Banana Cookies

  • Ripe Bananas, not green
  • Old-Fashioned Oats
  • Oat flour
  • Baking powder
  • Salt
  • Cinnamon
  • Vanilla Extract

How to make:

Mashed bananas in a white bowl.

Start by mashing up 2 large over ripe bananas (or 3 small), it should measure about 1 – 1 1/4 cups.

Dry ingredients, oats, oat flour, baking powder, salt and cinnamon mix together in a silver bowl.

In a large bowl mix dry ingredients.

Then add mashed bananas and vanilla. Beat with a hand or stand mixer until combined. If you do not have a mixer then just mix with a spoon until ingredients are smooth and combined. If you choose to add chocolate chips or other add-ons, then add here.

Heat oven to 350 degrees Fahrenheit. Line a cookie sheet with parchment paper. Place heaping spoonfuls on prepared cookie sheet and bake 10-12 minutes. Until cookies are slightly browned.

Ingredients

  • 1.25 cups Bananas mashed, ripe about 2 large or 3 small
  • 1 cup Old-Fashoined Rolled Oats
  • 1 cup Oat Flour see notes
  • 1 tsp Baking powder
  • 1/4 tsp Salt
  • 3/4 tsp Cinnamon
  • 1 tsp Vanilla extract

Instructions

  • Preheat oven to 350. Line a cookie (baking) sheet with parchment paper (or oil sheet)
  • Mix dry ingredients in a large bowl
  • Add mashed bananas and vanilla to bowl. Beat with a mixer until smooth and combined (*if adding chocolate chips or other add-ons, then add here and mix)
  • Place heaping spoonfuls on prepared sheet and bake 10-12 minutes or until slightly browned.
  • Enjoy!

Notes

*If you do not have oat flour and have a food processor – add a cup of oats to processor and blend until flour texture.
*Add-ons: chocolate chips, nuts, dried fruit, or coconut for different variations. Pictured above is a variation adding chocolate chips! Soooo good!

    Just made some. So easy and ingredients you probably already have in your pantry. NO sugar and you won’t miss it. I used raisins in mine.
