Chia seeds are such a power-packed tiny seed! They are full of Omega 3’s, antioxidants, a source of protein and fiber. I first learned about them several years ago after reading Born to Run by Christopher McDougall. I was fascinated by how the Tarahumara Indians used these seeds for hydration, endurance, and overall health. If you haven’t read this book, I highly recommend it! Especially, if you love running.
Chia seeds are so much fun to experiment with. I usually add them to my smoothies, smoothie bowls, granola bars, cookies, yogurt parfaits, and now pudding. I also like to mix about a tablespoon of seeds with a glass of lemon water or juice. Let it sit about 5 minutes while stirring frequently (this part is important or you will have a hockey puck at the bottom of the glass), then drink it. Super satisfying and filling.
When combined with liquid, the seeds expand giving a tapioca-type texture, making them perfect for making this Blue Spirulina Chia Pudding.
The addition of the blue spirulina gives this pudding a brilliant ocean blue color. Blue spirulina (Blue Majik) is a blue-green algea. It is basically a seaweed with phycocyanin, which is what gives it the vibrant color.

The combination of the chia seeds and spirulina makes this dish a powerful, nutrient-dense, delicious dessert! Layer with coconut yogurt, and you have a beautiful parfait! It makes a perfect summer dessert and is super simple to make!
Jump to RecipeTo make the chia pudding, you do need to plan ahead as the seeds need to have time to gel together. You should plan for a good 8-24 hours, therefore it’s best to mix the pudding the night before so that it has time to congeal. You want it to have a tapioca-type consistency.
In a bowl, mix the chia seeds with the milk, spirulina, maple syrup and vanilla. The blue spirulina will give it that beautiful bright blue color!
Store in a covered container in the refrigerator overnight. I prefer glass jars, and use a canning jar in the photo below.
Blue Spirulina Chia Pudding
Ingredients
- 1 cup plant-based milk, unsweetened
- 1/4 cup chia seeds
- 2 tbsp maple syrup, pure
- 1 tsp vanilla
- 1 tsp blue spirulina
Instructions
- In a medium size bowl, combine milk, chia seeds, maple syrup, vanilla, and blue spirulina. Whisk continuously for 1 minute. Transfer to container and refrigerate for 8 hours or overnight.
- Divide into small dessert dishes and add favorite toppings. Or layer with plant-based yogurt or cream.
